To me, this means that I put everything into it. I strive to fill your soul, not just your belly. El Burro Pollo is a concept and realization of the “authentic” Mexican Burrito Shop representing the people and the cooks that came from Mexico looking for a better life but can’t leave behind their culture, their food, their identities, and their history. EBP is designed to evoke the idea and memory of the street and its people. It is a convergence of cultures focused on authentic, humble, reused, repurposed, reclaimed, fresh, with touches of both hope and dreams realized and forgotten.”
